A full-cycle winery in the basement of a historic estate
At the heart of the project lies a full-cycle winery located in the basement of the historic estate, where wine is crafted by winemaker Arseniy Gordienko
Grapes from various wine regions across Russia arrive in refrigerated trucks. The team then processes it, ages the wine in barrels, concrete eggs, stainless steel tanks or ovoid vessels, and finally bottles it on-site. Every stage of production takes place within the walls of the 18th-century estate.

Guests can explore the production process and taste UW wines during guided winery tours and special tastings held throughout the year. In summer, during the grape-processing season, visitors can also experience the winemaking process firsthand.
Twice a month on Tuesdays, Urban Winery team opens the doors to its production space and shares how wine is made in the heart of Moscow.

During this two-hour tasting and winery tour, guests dive deep into the winemaking process. The experience begins with an introduction to grape processing and must, followed by an exploration of different aging methods. Surrounded by barrels, concrete eggs, clay ovoids and stainless steel tanks inside the wine pub, guests can see each stage come to life firsthand.
Along the way, the sommelier explains the basics of chemistry and biology in simple, approachable terms — to help guests better understand how wine is created. The educational journey concludes with a look into fortified wines and the solera method, the unique Spanish aging system that blends wines from different vintages in barrels, which can also be seen inside the wine pub.
Each stage is illustrated through seven Urban Winery wines — from pét-nat to experimental releases — paired with appetizers by UW brand chef Arina Zhuravlyova.
